Ingredients:

  • 8 oz (about 2 cups) elbow macaroni
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cups milk (whole milk preferred)
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/2 teaspoon mustard powder (optional)
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions:

Cook the Pasta:

As directed on the package, boil the macaroni until it is soft. Then, after thoroughly draining, set it aside.

Prepare the Roux:

Meanwhile melt butter in a saucepan over medium heat. Then stir in the flour and cook for 1–2 minutes to form a smooth roux.

Add the Milk:

Next, gradually whisk in the milk.Continue stirring until the mixture becomes smooth and thickened.

Melt the Cheese:

Add cheddar, Parmesan, salt, pepper, furthermore you can also add optional spices. Then stir until the cheese is fully melted and creamy.
