Ingredients:
- Basmati rice
- Chicken, mutton, or beef
- Onions (thinly sliced)
- Yogurt
- Ginger-garlic paste
- Tomatoes
- Green chilies
- Fresh coriander leaves
- Fresh mint leaves
- Cooking oil or ghee
Whole & Ground Spices:
- Cumin seeds
- Bay leaves
- Cinnamon sticks
- Cloves
- Cardamom pods
- Black pepper
- Red chili powder
- Turmeric powder
- Garam masala
- Saffron or kewra water
Optional:
- Lemon juice
- Fried onions
- Boiled eggs

Instructions:
Wash and soak rice
Rinse basmati rice until the water runs clear. Soak for 30 minutes, then drain.

Marinate the meat
In a bowl,firstly mix together the chicken or mutton, yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, salt, coriander, and mint. Give it at least an hour to marinate.

Fry the onions
Meanwhile heat oil or ghee in a pot. Fry sliced onions until golden brown. Lastly remove half for garnish.

Cook the meat masala
Add whole spices to the same pot, then add marinated meat. Cook until the meat is tender and oil separates.

Parboil the rice
After that boil water along with salt and whole spices. Cook rice until 70% done, then drain.

Layer the biryani
After that spread a layer of rice over the meat. Then, add fried onions, mint, coriander, and saffron or kewra water.Repeat layers if needed.

Dum (steam cook)
Cover tightly and cook on low heat for 20–25 minutes until fully done.

Rest and serve
Finally let the biryani rest for 10 minutes. Eventually mix and serve hot with raita or salad.
